There’s a new sustainable eatery in town, and they serve all budgets
Minimer, translated to minimize, is the brainchild of the couple Oliver and Maria. With their new Vesterbro café, they are looking to change our poor habits of wasting food, and we need them. In Denmark alone, 700.000 tons of edible food is thrown away each year.
The concept is based on three principles of minimizing food waste. Using all products that are declined by supermarkets due to beauty errors or wrong size, using products that are close to reaching their best before dates that would otherwise have been thrown and utilizing the full product, so no stems or peels are left behind.
At Minimer they serve the kind of simple dishes that makes you wonder how something can taste so good with such few ingredients. They create delicious salads, pies, and much more, and they fill your stomach for less than DKK 100, which is hard to come across in Copenhagen. It is up to you whether you want to eat at the café or take it to-go and maybe have a picnic at nearby Sønder Boulevard.
The menu changes on a daily basis, since they cook based on which food they get in from their vendor fighting alongside them in the battle of minimizing food waste. The menu is posted on their Instagram profile every day.
