From Bornholm rapeseed fields to oil and mustard
Taste Bornholm at Lehnsgaard, where rapeseed from the island’s fields is transformed into cold-pressed rapeseed germ oil. The story began at the old Lehnsgaard farm between Østerlars and Gudhjem, where farmer Hans Hansen had the idea in 2003 to develop a product from the rapeseed grown in the fields. Today, production takes place at Lehnsgaard’s oil mill in Aakirkeby, while the rapeseed is still grown on Bornholm.
Lehnsgaard follows the rapeseed from the field through to harvest. At the oil mill, the seeds are hulled before the rapeseed germ is cold-pressed into a mild, well-rounded oil. The classic rapeseed germ oil can be used for frying, baking and cold dishes, and Lehnsgaard also produces a range of flavored varieties.
Bornholm mustard rooted in old traditions
Lehnsgaard’s mustard is also produced at the oil mill using yellow and brown mustard seeds grown on Bornholm. The seeds are cleaned and ground in the company’s own stone mill, inspired by the old Bornholm tradition of grinding mustard seeds in a wooden bowl with a cannonball.
The mustard combines several Bornholm ingredients, including Lehnsgaard’s own rapeseed germ oil and beer from Svaneke Bryghus. It is available in several varieties, ranging from mild to hot and spicy.
Lehnsgaard’s rapeseed oils and mustards are sold by a wide range of retailers and can be found in both grocery stores and specialty shops on Bornholm.
